Masak-Masak entry – Rosemary Chicken with Coconut Sauce

Woow! It has been a long time since I last write about my cooking here. Last Sunday the spirit of Jamie Oliver came to me while wearing white songkok and a flying beca (cam bangsat kan? muahaha) and passed me a few drops of passionate determination thus I cooked!

Ok tipu! Sebenarnya Azman tidor dari tengah hari sampai petang so I didn’t have any choice but MASAK! Ok? If we were to go out at that time, I bet we wouldn’t be able to get a table at any restaurant at all. Kosserrr..

So I strike a yoga pose on my kitchen floor, looking for aspiration on what to cook and I remembered my herb garden! hey! Let’s have some ROSEMARY CHICKEN!

Rosemary chicken

Yeah, I guess I have never blogged about my homegrown herbs before, actually I do have a pot of rosemary growing very gloriously beneath the window (yg kena kopak perompak tu!). Bought the pot when the plant was small for RM10 and now it has grown very big and oh so fragrant. In fact I also have lots of other herbs and vegetable including bunga kantan, daun kesum, cabbage and kangkung.

All these while Azman and I and even Miki has been caring for all the plants but never I harvested them sebab sayang, boley?? haha!

Rosemary Chicken Recipe

-Chicken, I used 2 pieces of quartered chicken
-Two tablespoon of chopped fresh rosemary
-5 cloves of garlic
-Some peppercorn
-Olive oil
-Salt

I pounded the garlic and peppercorn together in a lesung batu, and then rub them on the chicken together olive oil and of course the chopped rosemary. You can use dried herbs but fresh is always the best. Don’t forget some salt to taste.

Pre-heat oven at 165-170 degrees before tossing the chicken in. I added another stalk of the herb for ecstatic value. hehe! I also added some russet potatoes and let them cook together-gether for 40 minutes.

For the sauce, I made regular brown sauce but instead of cream, I used santan and added a dash of oyster sauce. It tasted really good! Azman loved it!


Juadah berbuka

See above my Coconut Sauce, I wanted to sprinkle some paprika on it but the paprika jatuh seketul atas kuah tu.. ampehh tul! The skinny fried fish tiga ketul tu adalah ikan rebus goreng. Sedap hingga menjilat jari. I also made cili padi hiris dalam kicap for the pedasness.

Since I already have some santan, and during this Ramadan I eat very little vegetable, I decided to make some Kobis Masak Lemak. Comment that I got from my beau was a 4 star, he said it was not creamy enough. Amboi bang, dalam brown sauce tu dah ada santan.. kang ada arteri tersumbat kang sapa susah?

But I like this dish even since I was a kid, I added some fresh turmeric leaves for the aroma. Daun kunyit pun petik kat luar je.Nice!

Stir fried vegetables has become almost a must in my household. Miki loves the green peas and carrots. The kangkung was super fresh because I just plucked them from my garden 10 minutes before they were tossed into the wok.  Lovely!


Rosemary Roast Chicken with Potatoes. Served with Coconut Brown Sauce.

For those who would like to make any kind of roasted chicken, i would suggest you stick to preheated oven at 170deg and 40-60 minutes depending on the chicken cuts. Mine was perfectly cooked, the meat was very tender and juicy. Delicious!

I really dig the idea of planting our own vegetables and herbs. It’s kinda comforting knowing that I am cutting down the chemical intake from pesticides and fertilizers in the market-bought vegetables. Although now the supply of greens from my garden is not sufficient for our small family. Aku macam semangat gilerr nak tanam sayur uols! Haha!

  1. wow 10 bintang for u diyana. sangat menggugat keimanan org yg tgh berposer. nampak sgt lazat. btw nak roast chic tu kan, oven kena preheat brp lama dulu sebelum nak masukkan ayam?

Eintanz, mmg lazat la the chicken very juicy dan lembut tau! macam kenny rogers <-azman kata, bukan mak ferasan okeh? muahahah i x pasti la berapa lama pre-heat.. i rasa 15 minutes jugak kot. 40 min tu just nice... you nampak potatoes tu macam moist kan? actually i tak lumur olive oil pun kat kentang, itu dia serap jus ayam! sedappppp... try it babe!

    Where do you buy your herbs to tanam? I’m definitely interested. Asyik duk pakai the dried ones je.
