Malay Food 101 – Sambal Hitam Pahang Super Delicious

I am a northern girl. I stayed in Perak until I was 12 and then in Penang island till I was 19. When I started my bachelor degree in Universiti Malaya; I became a Klang Valley residence until today. That’s about 15 years already, did I just gave away my age? Oh well, I am 33 and fabulous… haha!

Having staying in the capital city of Malaysia that long, and mixing with people from all states not to mention all races and ethnic groups, one of the best thing that I learn is – MALAYSIA HAS SO MANY FREAKING GREAT FOOD!

I started eating nasi kerabu, nasi dagang, laksa Johor, mee kolok, tuhau (I bet you’d go wth is that?), rendang with daun puding etc etc etc since I came to KL.  Can you believe what I had been missing?

And one more exotic food that I just found out about a few years ago, probably when I was 30 – SAMBAL HITAM PAHANG!

Punya lah tak popular sambal hitam ni kat Penang, I think my Mom just found out about it too. She was casually mentioning it to me last raya and she was surprised that I know it..

“Eh, kamu tahu sambal hitam?”
“Yelah Mama, saya juga tahu meth, ice dan shabu…” Haa.. jawap camtu kang pengsan gak mak aku tu. hahaha

Anyway, it looks like a typical sambal, a bunch of chilies pounded together with other ingredients, but this one is black in color.  I don’t know how they make this stuff, I heard it is made of belimbing buluh. I really don’t care how to make this sambal, because I can just keep on buying it, and eat it, and eat it and eat it again and again BECAUSE IT IS SIMPLY DELICIOUS!!!

I have been introduced to several homemade brands of sambal hitam but let me tell you THE BEST sambal hitam is by “SAMBAL HITAM PAMAH KULAT”. Walaupun namanya Pamah Kulat, jangan pulak korang ingat ada kulat kat dalam tu.. If I am not mistaken, Pamah Kulat tu nama tempat in Temerloh ke Raub gitu lah, aku pergi Pahang pun 4-5 kali je dalam seumur hidup haha! Tapi makanan dia best. Maybe resepi sambal ni berasal dari area situ.

Ok, the sambal hitam tastes like ikan bilis, and then got pedas-pedas, got sourish flavour and then there is this magical taste call SEDAP  GILER. I don’t know how to describe it. Other brand of sambal hitam that I have taste lack texture but this one is really good to me because I can still savour the texture of the ikan bilis.

I usually buy a few packs and keep them in my fridge. Bila nak makan keluarkan secukupnya pastu panaskan dalam microwave. But actually kalau panaskan dalam kuali lagi best giler sebab dia jadi crunchy. Cara nak makan?? With just about anything!! It is tasty even with nasi putih.

It works as an alternative to sambal belacan and my favourite is with nasi goreng. In fact, when I fry the rice, I added a couple of spoon of the sambal to add flavour. Bagus kan? senang sikit hidup.

Delish! This is how I love to makan my sambal hitam! Dengan nasi goreng! Sebab kat rumah ni I usually cook non-pedas nasi goreng for the fact that MikiRafa eats the same thing. Nasib baik ada sambal hitam ni memang menyelerakan lah bila share makanan tak pedas dengan budak-budak. In fact I memang beli banyak sambal ni masa bulan puasa to eat during sahur.

My friends lagi fanatic. Ada ka they eat this with maggi? Haha! I am yet to try it but it sounds yummy jugak. Makan with pulut kuning memang best lahhhh… haihhh pendek kata you guys have to try it!
